Saku is the Japanese word for “block” and these blocks are cut from tuna loin. The tuna saku are great for sushi restaurants and the more Asian clientele.
100% Sashimi quality tuna
Tuna loin is the back of the tuna and weighs over 2 kilos. Out of the loin, steaks and saku can be cut. The loin can be used entirely, as the leftovers can be made into tartare. Like the saku, the loin is very suitable for sushi restaurants and the more Asian clientele.
The tuna steaks weigh between 180/220 g and are therefore nicely portioned. The steaks are commonly used in the mainstream food service sector.
