People usually prefer light or dark meat. This is exactly why turkey is the ideal meat, as it contains both. The light meat can be found in the breast and wings of the turkey. While turkeys can fly, they never actually do so. The muscles in the breast and wings are therefore hardly ever used. The darker meat can be found on the legs and thighs. Turkeys spend most of their time on the ground and the muscles in the legs and thighs are therefore used a lot. The muscles relax and contract when walking, and therefore possess many capillaries. These numerous capillaries account for the dark colour of the meat.
